Delicioso
1. delicious

both words describe this amazing dessert.
Key Lime pie in a jar. I first read about this over on Kasey's blog,printed it out and filed it for a
*to do* item someday.
and
I finished them up today.
{well I finished one up today because someone
has to taste test them to find out if anyone else
should partake of them or not}
I almost whipped my cream too much. Well, technically I
suppose I did whip it to much. I wasn't paying attention. Just put it in my kitchenaid
bowl and did other things while it was mixing away and next time I looked it

I was going to take more pretty photos, but I took one bite, and then another
and before I knew it the whole thing was gone! oh dear.
I am still trying to watch what I eat in my weight loss challenge and
this is all I have eaten today.
{I have lost approx. 20 lbs though..yay}
{in my defense I went to the dentist this morning and my mouth is still partially numb,
but I managed to get this pie in just fine. ha!}
Here is the recipe via Kasey's blog in case you want to try it.
I will say I used the small jars and put the crumb base in 10 of them
and did not have enough filling so three are sitting here with no filling. :)
I think next time I will either double the filling recipe or use the teeny jars.
I think that size would be very cute!

Key lime pie in a jar recipe:
{makes around 10 jars}
* small canning jars with lids
*2 sleeves of graham crackers {makes around 10 jars}
* small canning jars with lids
{crushed fine via a mini food or put in plastic bag and use a roller to crush them}
*1 can of sweetened condensed milk
*3 egg yolks
*1/3 cup of key lime juice { if you can’t find key lime juice…regular lime juice works well}
*one stick of unsalted sweet cream butter {melted}
Mix the graham cracker crumbs and the melted butter with a fork…then scoop two spoonfuls into bottom of glass jar. Press down the graham cracker crust with a spoon.
Bake the glass jars on a cookie sheet at 350 degrees for about 8 minutes till the crackers turn lightly brown.
Meanwhile mix in a separate bowl…the egg yolks…the sweetened condensed milk and lime juice. Once the graham crackers come out of the oven…pour the key lime mixture into each container… using about 1/4 cup mixture in each cup.
{this is approximate….and use as much or little as you want}
Bake for an additional 10 minutes.
Cool…then stick in fridge for 1-2 hours till cold.
Top with whipped cream…..
and viola…. key lime pies in a jar.

Pie Anyone ??
Coconut Cream Pie ...
Our struggling little church received a new pastor
{and wife} this summer and we are seeing very positive
results in the short time since they arrived. {YAY!}
One of their new ideas is to have a free lunch
one Sunday a month for anyone who wants to come.
Members of our church have embraced this idea
wholeheartedly and we have seen several new faces
in the short time that we have been doing this outreach.
Unemployment is high in our area and there are
so many people out there hurting who can
use a good home cooked meal.
Praying that we will continue to see
positive results and that these people will realize
that there truly is a God above who cares for them.
Okay , back to the pie. Someone brought an
Amazing
cream of coconut pie to one of the dinners.
It tasted like it was homemade.
surely it had to be.
but no...
I found out who brought it and that it was a
frozen pie
purchased at the grocery store.
I went right out the next week and
purchased one.
Yep, no restraint here with this gal !
Have I ever told you that...
I love coconut??
